milk. The right market for the milk skimmed for the pur-
pose of butter-making is really the vital question of the milk
industry. Skillllued milk has been used for various purposes

and ior milk cllnmpagne, which is skilunled milk mixed with
frultjulces and linpregrlated with carbonic acid. A rather
large percentage of skimmed nlilk is also separated into its
component parts, wllich aretllen worked up. The casein
serves lor the li) lilufacture or cheese; also for glue, putty and x
isolating substances. But all these <liHcrel:lt uses for skim-
med milk did not solve the question most favorably. But it
will be found oat before long. The trend of modern econo-
my is to waste nothing. Every by-product is made use of in
some way, with the result that cotton seed is almost as
vallnble as the fiber. One thing does not seem to receive
the attention it deserves, and that is how to utilize the sweep-
ings of our streets, the sewerage and garbage of our towns.
